Hershey's Chocolate cake
















I found this cake recipe on Hershey's cocoa powder box. It has rich chocolate flavor and super moist texture and is one of my favorite recipes. It is much easier to make and perfect recipe for beginners.
 

1¾ cup all-purpose flour (maida)
2 cups sugar
¾ cup cocoa powder
1 ½ tsp. baking powder
1 ½ tsp. baking soda
½ cup vegetable oil
2 egg at room temp
1 cup milk (warm)
2 tsp. vanilla extract
1 cup boiling water


Method:

Preheat oven to 350F. Grease and flour 2 round baking pans and keep aside.

In a bowl mix all dry Ingredients. Then add eggs, oil, milk, vanilla extract and beat with a whisk for 5 min until everything is well combined. Stir in boiling water and mix again.

Divide batter in both pans equally and bake for 30 to 35 min. or until wooden pick inserted in center comes out clean.

Cool for10 min. then remove cake on a wire rack and let it cool completely.

Dust some powder sugar or cocoa powder and sever.

Carrot cake














This is one of the most irresistible cake, which is moist, and flavorful. This is a great healthy dessert option which everyone in your family will love.

Ingredients:

2 cups grated carrot
3 eggs
1/2 cup vegetable oil
1/2 cup finely chopped pineapple (fresh or canned)
2 cups all purpose flour
2 tsp baking powder
1 tsp salt
1 tsp nutmeg powder
1 cup brown sugar

Method:

Preheat oven at 350 degree F. grease the baking pan and keep aside.

Sift together flour, baking powder, salt and Cinnamon. now add grated carrots to the flour mixture and mix well.

In another bowl beat eggs, then add sugar and pineapple and mix well. Now slowly add flour and carrots mixture and mix till everything is combined properly.

Pour batter in the greased pan and bake for 60 min.check if cake is done by inserting a knife in the center of the cake, if it comes out clean then the cake is done. if it is still sticky bake for another 10 to 15 mins.

Once the cake is done let it cool down for few min on a wire rack.

Valentine cake



This yummy cake was valentines day gift for my husband. It is very simple to make and delicious recipe to impress your loved ones. 

Ingredients:
1 heart shape sponge cake. (follow the recipe of Vanilla sponge cake )  
1 pack (8 oz/ 230 grams) cream cheese at room temperature.
1/2 stick butter at room temperature
1/2 cup powder sugar
1/2 cup sliced strawberries
Marzipan and food color for decoration.

Method:
In a large bowl mix together cream cheese, sugar and butter and beat this mixture till light and fluffy.

mix marzipan with red food color and kneed the dough till the color is mixed properly. now roll it on a plastic sheet and cut out the heart shapes using a Cookie cutter and keep aside.

Cut the cake in two half's as shown in pic. and spread 1/3 of the cream cheese batter on 1 sheet of cake, arrange the strawberry slices and cover with the second sheet of cake. 




Now cover the cake with reaming cream cheese mixture and decorate with marzipan heart shapes. refrigerate and enjoy for 2 days.

Vanilla sponge cake


This is a simple sponge cake recipe which you can use to make delicious desserts. Ingredients are as follows

6 eggs
1 sticks/ 1/2  cup melted butter
1 tsp baking powder
1 cup powder sugar
1 tsp salt
1 cup all purpose flour
2 tsp vanilla essence
Method:
Preheat oven at 375 degree F. 

Whisk together all purpose flour, salt and baking powder and set aside.

separate egg whites and yolks in two different bowls. beat egg whites and 1/2 cup sugar till light and fluffy and keep aside

Now beat egg yolk and reaming 1/2 cup  sugar till smooth, then add flour mixture, vanilla essence, melted butter and mix well. 
Once the batter is smooth add the beaten egg whites mixture and slowly mix the batter. do not over mix the batter or the cake will not turn fluffy.

pour the batter in a greased baking pan and bake for 25 to 30 min. check if cake is done by inserting a knife in the center of the cake, if it comes out clean then the cake is done. Once the cake is done let it cool down for few min on a wire rack.

Chocolate cupcakes


Everyone in my family is huge fan of chocolates,and chocolate in a cupcake makes it even more yummier. These moist, chocolaty cupcakes are delicious and very tempting.

Ingredients
1½ cup all purpose flour / maida
1½ tsp Baking powder
½ tsp salt
1 stick (½ cup) butter
2 eggs
2 tbsp milk
½ cup semisweet chocolate chips
½ cup sugar

Method
Preheat oven at 350 degree F.
Line muffin pan with paper baking cups and keep aside.
mix well all- purpose flour, baking powder and salt and keep aside
Melt chocolate chips and butter on a double boiler. Then add eggs, flour mixture and mix well.
Now add sugar and milk and mix again.
Scoop the mixture evenly into the baking cups ( makes around 10 cupcakes) and bake at 350 degree F. for 20 to 25 min.

Tres Leches cake


Tres leches is three milks in Spanish.  A light and fluffy sponge cake soaked in mixture of 3 kinds of milk is moist and delicious. This is a very popular dessert in Latin America.

Ingredients:

2 ½ cups all purpose flour or Maida.
5 eggs
2 sticks/ 1 cup butter at room temperature
1 ½ tsp baking powder
1 cup sugar
1 tsp salt
1 cup heavy cream
1 cup evaporated milk
½ cup condensed milk
1 tsp vanilla essence.

Method:
Preheat oven at 325° F.

Whisk together all purpose flour, salt and baking powder and set aside.

In a large bowl beat butter and sugar till light and fluffy.

Add eggs, Vanilla essence and mix well. Now slowly add flour mixture and mix well.

In greased 9 inch pan pour the batter and bake at 325 ° F for 40 to 45 min check if cake is done by inserting a knife in the center of the cake, if it comes out clean then the cake is done. Once the cake is done let it cool down for few min. now poke the top of all over the cake with a fork.

Mix together heavy cream, evaporated milk and condensed milk. Now pour this mixture over the cake and refrigerate it.

Sever with your favorite topping.

Cheesecake Brownies


 















You will love this irresistible combination of two best desserts, Cheesecake and brownies. Great for any party, they taste and look delicious.
Ingredients:
For cheesecake batter:
225 gms (8 oz) cream cheese - Fat Free (Room temperature)
2 tbsp Heavy cream
½ cup fine sugar
1 Egg
½ tsp vanilla extract

For brownies batter
100g semisweet Chocolate
125g butter
1/4 cup cocoa powder
1 cup sugar.
2 eggs.
1 cup all purpose flour/ maida.

In a bowl, soften the cream cheese and make sure no lumps remain. Add heavy cream, sugar, eggs , vanilla extract  and mix well and keep aside.

In another bowl melt chocolate and butter on double boiler, remove from heat and let it cool a bit then add beaten eggs and sugar and mix well. Now add cocoa powder and flour, mix and make sure no lumps remain.

Pre-heat oven to 325⁰ F/160⁰ C.
Grease some butter in baking dish and pour brownies mixture and spread evenly in the dish then scoop cheesecake mixture over brownies mixture. With a help of spatula mix both the batters slightly so get the effect of a marble swirl.  
Place backing dish in oven and bake for 40 to 45 min. To check if brownies are done insert a knife in the center the knife will not come out clean but will have little crumbs on it.
Chill in refrigerator for 2 to 3 hrs and serve.

Baked Saffron Cheesecake



This yummy cheese cake is all time favorite dessert of my family. This rich and creamy cake just melts in your mouth. Easy to make and a sure recipe to impress guests.
Ingredients:
For base
You can use a store bought pie crust or can make one at home.
125 gms (4.0 oz) Digestive biscuits.
1 Tbsp Fine sugar
45 gms (1 ½ oz ) melted butter
For Filling
400 gms (14 oz) creamcheese (Fats Free) at Room temperature
150 ml (5 oz) Heavy cream
50 gms (1 ¾ oz) fine sugar
2 Eggs
2 Pinch of saffron
2 Tsp of water
Finely grated zest and juice of 1 lemon

Method:
Crush digestive biscuits finely. Add in the sugar, butter and mix well. Now press firmly this mixture into cake tin and keep in refrigerator to set.
Add saffron into 2 tsp of water and let it soak.
In a bowl, soften the cream cheese and make sure no lumps remain. Add heavy cream, sugar, eggs, lemon zest and juice.  Mix well till the batter is smooth. Now add half of the saffron mixture and mix again.  Slowly pour the mixture over the base in cake tin. Now pour the remaining saffron water on top.
Pre-heat oven to 325⁰ F/160⁰ C.
Place the cake in the middle rack and bake for about 60 mins. The cake is done when the surface is firm, but should wobble slightly in the center. Turn off the oven and leave the cheese cake in the oven for 10 min. Remove the cake and let it come to room temp. Then chill in refrigerator for at least 4-5 hours.
Garnish with little saffron on each slice of cake.
